Strawberry, lemon cream and chopped pistachios

For the (milk-free) lemon cream

  • 4 egg yolks
  • 2 lemons (peel and juice)
  • 200 cl mineral water
  • 60 g corn starch 
  • 140 g sugar

For the biscuit

  • 400 g egg
  • 250 g sugar
  • 150 g flour
  • 100 g potato starch
  • grated lemon peel 

For the low, cylindrical glass

  • fresh strawberries
  • honey
  • cat’s tongue biscuits
  • chopped pistachio

For the lemon cream
Place the yolks, the sugar and the corn starch in a small pan and mix them together. Then gradually add the lemon juice and the grated peel. Put the mixture on the heat and cook for 2-3 minutes until it becomes creamy.

For the biscuit
Sieve and blend the flour, the potato starch and the lemon peel. Blend the eggs with the sugar. Slowly add the flour with a wooden spoon. Place the mixture in a mould that has been greased and dusted with flour. Put in the oven at 175°C for around 30 minutes.

To present the dessert glass
Fill the glass by alternating the lemon cream with the biscuit and the strawberries (previously marinated in the honey). Add the strawberries as the final layer, then sprinkle some chopped pistachios, a mint leaf and the cat’s tongue biscuit.
