Crunchy goat’s cheese pie, goat’s cheese fondue, asparagus salad and toasted almonds

Ingredients

For 6 people:

  • 500 g puff pastry for the crust

For the filling:

  • 300 ml milk
  • 300 ml cream
  • 500 g eggs
  • 200 g grated goat’s cheese 
  • 30 g salt

For the goat’s cheese fondue:

  • 150 g semi-seasoned goat’s cheese 
  • 100 g goat’s milk
  • 1 egg yolk
  • Salt as required 

For the plate

  • Green asparagus marinated with olive oil and lemon
  • 30 g toasted almonds
Steps

Roll out the puff pastry, and with a large food ring mould, cut the pastry and coat the single-serving aluminium containers.


Blend the milk, cream, eggs and grated goat’s cheese. Fill the lined containers and place in the oven at 180°C for 12 minutes.


For the goat’s cheese fondue:
Heat the goat’s milk, adding the goat’s cheese and, using a food mixer, blend it all together. Add the egg yolk to stop the mixture from curdling.

To present the dish:
Place the goat’s cheese fondue on the bottom of the plate, put the pie above it, along with the finely sliced asparagus seasoned with the lemon and the extra-virgin olive oil, topped off with the toasted almonds.
